When making a pot of jam?How much lemon juice should I add for asian pears

We don't have any research-based recipes for making Asian Pear jam or butter from a reliable source.  Asian pears are one of those borderline fruits that could be in the low acid range, so we need to be careful when canning them and be sure they are acidified with bottle lemon juice.  

That said if you want to make jam you need to follow recipes that are high in sugar and one that has lemon juice added.  You could follow a basic recipe for making fig jam with high sugar with added lemon juice or use a pectin recipe for pears using a commercial pectin that is high sugar and has added lemon juice.

Do not reduce the sugar in these recipes or the lemon juice. They are there for safety.  Do not make a low sugar spread.  If you want low sugar, make small batches and refrigerate or freeze.
